Week 1
Module 1. Chocolate filling
You will master the skill of sponge baking, salted caramel and chocolate cream making, cake assembling in a frame and will find out a few professional tips and tricks.
Module 2. Two types of cake frostings
We will provide a step-by-step instruction on making:
- our signature Tortik Annushka ganache
- traditional chocolate ganache
Module 3. Smoothing a cake
For those who are interested in how we create perfectly smooth cakes with sharp square edges we will show our how-tos and tools to use as well as reveal a few secrets.

Module 4. Two ways of chocolate tempering
We will bust a myth that chocolate tempering is a complicated process and will show the way we do it. We are going to outline 2 ways of chocolate tempering: stone and mycryo tempering. The acquired skills will help you create various chocolate designs.
Module 5. Geometry Design
We will practice cake smoothing with grey ganache on pre-cooked sponges, make cake decorations and analyze our signature Geometry cake design.

Module 1. Lavender-Apricot Filling
In our video tutorial Rustam will show you how to bake sponges, make lavender ganache, lavender cream, apricot cream and you will have another chance to practice cake assembling with no frame.
Module 2. A 2-tiered cake stacking
We will share our way of stacking multi-layered cakes
Module 3. Modelling chocolate handling
We will teach you how to make modelling chocolate and how to work with it.
Module 4. Petals from modelling chocolate
We will teach you how to make petal shapes from modelling chocolate.
Module 5. Velvet texture finish
We will teach you how to make a velvet cake finish and outline designs to go with this technique.
Module 6. Petals cake design
You will be able to recreate our signature Petals cake design under our guidance.

Together we will go through all the process stages: baking sponges, making cream and confit, as well as cake assembling.
Module 2. Polycarbonate molds handling
You will learn how to work with polycarbonate chocolate molds the right way.
Module 3. Chocolate tempering and chocolate cones making
You will polish the skill of chocolate tempering and find out a way to make chocolate cones.
Module 4. Cones cake design
We will use all the acquired skills in the process of decorating our signature Cones cake by Tortik Annushka.
